Exhaust ducts are where grease hides. Here is how commercial grease duct cleaning works, what access is needed, and why the ductwork matters as much as the canopy.

Exhaust ductwork carries grease-laden air from the canopy to the exhaust fan, often through ceilings, risers and roof spaces. Because you cannot see inside it, duct grease is easy to forget. Here is how kitchen exhaust duct cleaning works and why it matters.
Suitable methods include controlled scraping, mechanical brushing, manual grease removal and degreasing, chosen to suit the duct construction, grease condition and safe access. Many ducts can be cleaned in place through existing access openings. Within the agreed scope, Apex cleans all accessible and reachable areas of your ductwork. See kitchen exhaust duct cleaning.
Ducts can only be cleaned where they can be reached. Some systems have long sections without access openings, or bends that cannot be reached from existing panels. In those cases additional access arrangements may be needed. The ABCB’s guide to NCC clause F6D12 notes that kitchen exhaust hoods must comply with AS 1668.1 and AS 1668.2; design and installation matters such as these sit with your mechanical contractor.
A good report clearly lists any sections that could not be accessed, so you know exactly what was cleaned.
It depends on cooking style, volume and inspection findings. As published examples, Chubb’s risk bulletin refers to AS 1851 and suggests exhaust ductwork at least yearly, and Vero’s guidance suggests the duct system at least every six months, with both calling for more frequent cleaning in heavy-use or deep-frying kitchens. Check your own obligations and insurer conditions.
Many ducts can be cleaned in place using existing access openings. Some systems need additional access before effective cleaning is possible.
Visible grease at accessible openings, overdue cleaning records or inspection findings can indicate contamination. Internal condition should be assessed by competent personnel.
Accessible vertical risers can be cleaned using methods suited to their configuration, height and access.
